Course Learning Outcome(s) 

By the end of this course, learners will be able to implement sustainable, personalized healthy eating habits aligned with their unique health goals and lifestyles by applying core nutrition principles, developing effective meal planning strategies, and overcoming common dietary barriers, all in alignment with improving overall well-being, optimizing energy, and promoting long-term health management.

Module and Lesson Learning Objectives 

Lesson 1: Understanding Core Principles of Nutrition

TLO 1: Learners will be able to apply the core principles of nutrition to a balanced diet.

ELO 1.1: Define key macronutrients and micronutrients and their functions in maintaining health.

Sub-ELO 1.1.a: Identify nutrient-dense foods and their role in overall health.

Sub-ELO 1.1.b: Capture the concept of a balanced plate, including portion control, to achieve nutritional goals.

Lesson 2: Meal Planning and Grocery Strategies

TLO 2: Learners will be able to design personalized, sustainable meal-planning strategies that align with their health goals and dietary preferences.

ELO 2.1: Develop a detailed, personalized meal plan based on individual health goals, dietary needs, and lifestyle factors.

Sub-ELO 2.1.a: Identify cost-effective and nutrient-dense options during grocery shopping to support healthy eating habits.

Learning Materials and Activities

The end of Module 1 Assessment questions are aligned with the TLOs. The activities are aligned with both. 

Module 1 Lesson 1 aligned with the TLOs and ELOs 

(L1) Activity 1: (internal activity) Learners will take a pre-lesson survey to gauge their understanding of micro and macronutrients, general knowledge, and assess their eating habits. (will be downloadable - in progress)

(L1) Materials: Class Handout - Macronutrients and Micronutrients: Essentials for Human Health

(L1) Activity 2: (internal activity) Learners explore an interactive balanced plate.

(L1) Activity 3: (internal/external activity) Students go to the grocery store and log foods they typically purchase in a table, listing the macro and micronutrient content for each item. They evaluate the nutrient density of each item, which helps them understand the quality of their usual food choices.

(L1) Materials: Announcement and shopping list worksheet.

(L1) Activity 4: (internal activity) Students participate in an optional LIVE class discussion. 

(L1) Activity 5: (internal activity) Building a balanced plate by correctly identifying (drag and drop) macros and micros.

(L2) Activity 7: Students create a personalized meal plan for a week, aligned with their health goals. This activity requires them to consider factors like portion sizes, variety, and cost.

(L2) Activity 8:  Students simulate grocery shopping on a budget, selecting nutrient-dense foods that align with their meal plans. They research or visit a grocery store to price-check items, promoting cost-effective yet nutritious options.

The Module 1 Assessment is available in Articulate Rise360. Reviewers do not have to have to navigate through the entire module in order to take the assessment. The assessment is in Review360, which means the grades are not recorded and can be taken multiple times. Once the course is published to the Reach LMS, the settings will be changed.

Reflection

Creating this Level 2 survey challenged me to design an assessment that not only evaluates learners' understanding of key concepts but also aligns with the overall learning objectives in a meaningful way. Through this process, I considered the importance of variety in question types to engage learners and assess their ability to apply knowledge rather than simply recall facts. The data gathered from this assessment will provide valuable insights into how well learners are grasping the material and identifying areas where they may struggle. By analyzing the results, I can pinpoint specific topics or question formats that need improvement, ensuring the course remains responsive to learners’ needs and continually evolves to offer an effective and engaging educational experience.
